La Chicca's cooking class starts where each of our days starts: at the Sant'Ambrogio market, a hundred meters from the restaurant. You go shopping with the chef, head back to the kitchen and cook what you've chosen together.
How it works
It begins with a coffee and a chat with the chef about what the market might have that morning. Then you head to the stalls: the chef teaches you how to recognize fresh fish, why one vegetable is better than another on a given day, and what to ask a good supplier.
Back in the restaurant's open kitchen, you prepare a full menu: small bites, a pasta course, the sauces, a main course and a dessert. Wine is poured throughout the session. At the end you sit down at the tables and eat what you've cooked, with no rush.

The Sant'Ambrogio market
The menu isn't fixed and we don't know it in advance: it's decided in the morning, in front of the stalls, based on what has come in. That's why no two sessions are the same. It's also why the restaurant was born here: the market is a one-minute walk away, and it decides what gets cooked.
What's included
Coffee and a briefing with the chef, the guided market visit, all the ingredients, the hands-on session in the kitchen, unlimited wine (white, red, sparkling or rosé), lunch with the dishes you've prepared, a recipe booklet to take home and a certificate signed by the chef.
Times and group size
Three sessions a day: 10am-1pm, 12:30-3:30pm and 2:30-5:30pm. Groups are limited to six people. The experience is held in Italian and English, at Via dei Macci 79 rosso, in Florence's Sant'Ambrogio neighborhood, a fifteen-minute walk from the Duomo.
